Acahual Honey or Butter
It is obtained from the nectar of two flowers: Acahual and Casahuate, white and yellow flowers. For this reason, sometimes honey can be whiter or yellow depending on the nectar that predominates. These bloom from November to January in the mountainous areas of Morelos. This honey is much denser and more opaque than others, with a light yellow color. It is obtained by a controlled process so that its consistency is smooth like butter. It is treated through special filters to remove all impurities and to reduce the size of the crystal, through a process called rapid crystallization. It is a special honey since it crystallizes in a creamy way in a natural way, hence it is known as butter honey.
The process lasts 3 to 4 days and it also involves periods of agitation and rest. Throughout the process, the temperature is controlled in order to avoid decomposition or nutritional loss of the honey.

Components of honey
In chemical analysis, in every 100g, pollen presents on average the following elements:
- Free amino acids: from 10.0 to 13.0%.
- Proteins: from 15.0 to 30.0%.
- Lipids: from 1.0 to 5.0%.
- Carbohydrates: from 20.0 to 40.0%.
- Red sugars: from 24.0 to 26.0%.
- Non-red sugars: from 2.0 to 4.0%.
- Fibers: from 3.0 to 5.0%.
- pH: 4.7 to 5.2%.
- Mineral salts: 2.5 to 3.5%.
Vitamins:
Thiamine, Riboflavin, Nicotinamide, Pantothenic Acid, Pyridoxine, Meso-inositol, Biotin, Folic Acid, Cyanocobalamin, Ascorbic Acid, Vitamin D, Tocopherol, Carotene.
The amino acids present are:
Aspartic Acid, Glutamic Acid, Alanine, Arginine, Cystine, Glycine, Histidine, Isoleucine, Leucine, Lysine, Methionine, Phenylalanine, Proline, Serine, Threonine, Tryptophan, Tyrosine and Valine.
Mineral salts:
Calcium, Chlorine, Magnesium, Phosphorus, Silicon, Sulfur, Iron and Potassium.
Carbohydrates Honey naturally contains glucose and fructose.
Raw honey also contains complex trisaccharides that are part of the pollen that is present in artisanal honeys.
Proteins and amino acids. Honey, apart from essential amino acids, contains proteins in the form of enzymes such as amylase, invertase, glucosidase and other free amino acids such as proline.
Multiflora Honey
This honey is harvested in a season that various flowers of fruit trees bloom simultaneously in the southern area of Morelos. Its flavor, therefore, has sweet fruity notes that remind us of the characteristic flavor of our childhood. They are spring and their ideal climate is humidity. The variety of flowers in one of these honeys is immense and depends on the geographical region. There are light, dark, creamy, thin, intense flavor, slightly salty or with a touch of acid. Citrus honey
Orange blossom honey comes from the nectar extracted by the bee from citrus flowers, mainly from the lemon tree (Citrus limon) or the orange tree (Citrus sinensis), the latter being more common. Both are evergreen fruit trees and can reach heights of 4 meters in the case of the lemon tree, up to 13 meters in optimal growing conditions in the case of orange trees. Citrus fruits are trees with a warm climate, which cannot stand neither intense cold with frosts, nor temperatures above 40ºC. They bloom in spring, although out-of-season blooms can also occur. The consumption of this honey is recommended in late spring, which is when it is extracted from the hives.
Orange blossom honey is a light amber honey and has a fine character, soft on the palate and very aromatic.
